Ingredients:
- 12 oz raw bok choy
- Pot of water 3/4 of the way full
- 1 tsp salt himalayan rock salt
- Large bowl with ice water(enough to cover vegetables)
- pan with paper towels
Prep:
- Clean and remove withered leaves
- Bring a pot of water to a boil
Cooking:
- Add bok choy to boiling water
- Boil for 3 minutes
- Remove bok choy and immediately place in large bowl with ice water in it
- Gently stir twice (to make sure ice water is properly distributed)
- Let sit for 3 minutes (to ensure that the cooking process has stopped)
- Remove bok choy and place on pan lined with paper towels to soak up excess water
- Gently dry with paper towels
- When bok choy is dry, lightly sprinkle with salt
