Ingredients:

  • 12 oz raw bok choy
  • Pot of water 3/4 of the way full
  • 1 tsp salt himalayan rock salt
  • Large bowl with ice water(enough to cover vegetables)
  • pan with paper towels

Prep:

  • Clean and remove withered leaves
  • Bring a pot of water to a boil

Cooking:

  • Add bok choy to boiling water
  • Boil for 3 minutes
  • Remove bok choy and immediately place in large bowl with ice water in it
  • Gently stir twice (to make sure ice water is properly distributed)
  • Let sit for 3 minutes (to ensure that the cooking process has stopped)
  • Remove bok choy and place on pan lined with paper towels to soak up excess water
  • Gently dry with paper towels
  • When bok choy is dry, lightly sprinkle with salt
